Brenda is correct in the pH levels she says are acceptable for koi. It’s a good idea to try to keep the pH levels in the 7.8 to 8.2 range if you can.
If you don’t want to have large swings in pH levels in your pond water, try to find someplace you can buy a quantity of crushed oyster shells. Place them in a net bag or bags (Nylon stocking will work as long as the oysters can be spread out, …. not tightly bound) and spread them out on top of your biofilter media (or where water will flow through them). Crushed Oyster shells do a pretty good job of buffering (stabilizing) the pH swings in a ponds water, and should be a big help. Don ikeepkoi
