I have my GH and KH testing from my tap, but I didn’t do them with a baseline test, I assume that as the water sits the GH and KH will be used up slowly and the pH drops? Am I correct?

Yes, if you did daily PWC’s, your tank would slowly get closer to your tap water parameters but without knowing what they are, you would never know what to compare your tank to, to even know if they reached similar parameters.
