[Ponds-Koi] Question, problem with my pond.

Is your biological filtration working? Probably not. Since you have nearly zero on nitrite and nitrate, your pond is not cycling properly (the nitrogen cycle… ammonia>nitrite>nitrate).
Do you know about the nitrogen cycle? If not, go to my blog and on my page “A to Z of fish keeping”, there are two free online tutorials that you can browse through to learn more about this process and I think I have the link to a single article about the nitrogen cycle also but the tutorials are really good to learn lots of other much needed information.
Try this as a quick fix. Take some filter media from one of your other cycled ponds and change it out with the new poly pond filter media and that should do the trick. If it doesn’t, then something in that pond may be killing off the nitrifying bacteria in the filter media… that’s the good bacteria.
If your pond company is baffled about this, you should start coming out here for advice as the pond company does not seem to know very much about the nitrogen cycle which is something all fish keepers should learn and professional fish companies MUST KNOW THIS.
Now… if this pond was fully cycled before, have you done anything like changing out all of the filter media, adding any kind of medicine, not dechloring the water before or during a water change, etc.?
