Hey now… not that I’d eat much out the Good Ole’ Mississippi River but (in my best Huck Finn voice)… dem dang catfish sure like all dem chemicals n’ stuff dat da other 20 States send down to us down here in N’Awlins…

And speaking of a “nice big pot” (that Bill referred to in his last paragraph), I just finished my first Crawfish Boil of the year and I used a 25 Gallon pot to boil the 44 pounds of live mud-bugs that we pinched and sucked down today… yeah.. I said pinched and sucked cuz that’s how we eat them.. pinch the tails and suck the heads. Along with five pounds of hot sausage, 10 pounds of red potatoes, a dozen ears of corn, a pound of mushrooms, a couple of artichokes… and any other loose vegetables I had in the fridge.. oh yeah.. and four pounds of crab boil, 32 oz. of hot sauce and my own special seasoning mixens. Mmmmmm.. Mmmmmmm… Goood!!!!!
