Yes, your Koi would also love it but I’m wondering about the rind? I’m guessing it’s OK for them to eat since we humans eat the rind when cooked but you might want to double check it with other Koi keepers. I know my goldfish prefer NOT to eat the rind and I blanche the zucchini first but the rind semi-circle is still left over after they are done with all the pulp. I guess it would depend on how big your Koi are getting. A full grown one could probably eat a small zucchini in one bite.
